A new underground cocktail bar is about to open in Liverpool city centre.

Manolo will take over Santa Chupitos on Slater Street, which announced its closure after thirteen years of operation. The decision to close the bar was made after the owners claimed that it was “not quoted as before Covid”.

Now, Manolo is ready to take over the popular with a new concept: a clandestine cocktail bar with expertly created Caribbean-inspired cocktails, reinvented classics and bar snacks. The new bar will come from Salt Dog Slims owner Nick Thomas.

Manolo will reflect a cocktail bar with reinvented Caribbean cocktails and classics, immaculate glassware and an “extraordinary” waiting service through experienced staff. Reservations will be encouraged and walk-in tours will be subject to availability.

In addition, the popular bar El Bandito is also in the process of being remodeled both inside and outside, which will be equipped with a new rest area. It is expected to reopen in August. The Bandito is a component of the GSG Hospitality brand.

John Ennis, from GSG Hospitality, said: “The Bandito needed to be updated and we are excited to reopen Liverpool’s famous tequila shop this summer after a renovation, the arrival of outdoor seating and a new cocktail menu. This will give El Bandito another dimension, welcoming the drink outdoors and remembering why El Bandito exists; spread the intelligent call of agave and that is what it will continue to do.

Nick Thomas, Manolo’s new owner, added: “Manolo will bring a new concept to the region with Caribbean-inspired cocktails, trendy drinks, bar snacks and a whole new aesthetic. For years, I’ve been diligently handling the scenes in some of the concepts and concepts I need to integrate into Manolo.

“I’ve worked on lab projects and redesigned old drinks, which I think is, in fact, an exclusive experience for visitors. A Tasting service for Caribbean drinks in the bar of a London hotel. I can’t wait to start.

Manolo does not yet have an opening date.
